Thai red rice has a pleasant nutty flavour and chewy texture, and like brown rice, it is a healthier alternative to polished white rice. It does take a bit longer to cook and more water – use 1-3/4 cups of water and half a teaspoon of salt for each cup of rice and cook for about 35 minutes. For a fragrant Thai-influenced pilaf (or poultry stuffing), sauté some ginger, garlic, Chinese sausages and flowering chives in 2 tablespoons of peanut oil for a few minutes. Add 1-1/2 cups of rice and cook, stirring, for a few minutes more. Add a splash each of fish sauce and rice wine, plus 2-3/4 cups of chicken stock. Bring to a boil. Reduce heat, cover and simmer for about 40 minutes or until the rice has absorbed all of the liquid. Remove from the heat and stir in freshly ground pepper, diced water chestnuts and coriander leaves. Taste and adjust for saltiness. (If using for a stuffing allow the rice to cool thoroughly before stuffing the bird.)
