Passata is a smooth tomato coulis that captures the taste of fresh, ripe tomatoes. Unlike ordinary passatas, Favuzzi's adds some cherry tomatoes for extra richness and a touch of sweetness. That's it, other than a pinch of salt. Use as a base for soups and sauces, or as is, to simmer sausages or veal meatballs.
