Papadum, or papad, are thin, very crisp crackers served as an accompaniment to meals or as a snack with chutneys and pickles, These are made with urad-dal flour, and are gluten free. They must be cooked, very briefly, either by deep or shallow frying, or directly over a heat source. They can also be cooked in a microwave for about 10 seconds. Frying produces the tastiest and best-textured results. This variety is flavoured with cracked peppercorn.
