Dried orange peel is not just a substitute for fresh orange zest, it has a distinctive earthy aroma all its own. Our peel is the Asian variety; large, slowly dried strips that have taken on a darker hue and a mellower, deeper flavour than the more usual chopped pieces, which can be bitter and harsh. Use in stir-fries with other aromatics such as star anise and cinnamon. Also combines beautifully with dried chiles. Essential for the slow-simmered, French classic, bouef en daube.
