This delicately perfumed distillation of bitter orange blossoms is used throughout the Mediterranean and Middle East, and in Mexico, primarily to flavour and aromatize pastries and beverages, but it also has a place in the savoury kitchen. Use instead of rose blossom water in any recipe for a lighter, less cloying fragrance.
