This pasta shape is not too common here, but is widely popular in Italy. Gemelli means twins, an allusion to what appears to be two entwined spirals – a perfect shape for holding a sauce with some body. Favuzzi pastas are made with traditional bronze dies which impart a slightly rough surface which helps sauces stick, and are slow dried for a better al dente texture. These artisanal Ligurian pastas are made with pure spring water and locally grown durum semolina.
