Premium cellophane noodles (poor quality versions have a gummy texture) turn transparent when rehydrated, and have a pleasant, slippery texture (perfect for slurping!). Not much flavour, but that's the idea – the flavours of the dressing, stock or sauce are absorbed into the noodles. Since they absorb an amazing amount of liquid, these can fill you up with a very low carb intake. Great in in East Asian and Southeast Asian salads, soups and stir-fries.
