This usually sour (we also sell a sweet variety, fresh) fruit is of great culinary and nutritional importance throughout most of the world. Although thought to be native to Africa, its name is derived from the Arabic tamar hind, meaning Indian date. It is used in chutneys, pickles, table condiments and sauces (worcester, HP), soups (sinigang, canh chua, sambar), stews, moles, curries (keang som), noodle dishes (pad Thai), salads (chaat), desserts, candies and beverages (tamarindo, cola). This paste has to be soaked in hot water and strained, but it is more economical and produces the best results.
