Ssamjang (literally “wrap sauce”) is made
by adding ingredients such as gochujang,
sesame oil, onion, garlic, green onion and brown sugar to doenjang. As the name suggests, it is
used along with grilled meats, kimchi, and sometimes rice and other ingredients
in Korean leaf wraps (ssam).
Variations are made by adding ground nuts and seeds, or minced and fried onions,
garlic, peppers and octopus, or fish roe, to basic ssamjang. Ssamjang can also be basted on grilled
meats, added to stir-fries, used in dips – even in burgers and sandwiches.
