Winter savory (satureja montana) is very fragrant, with a peppery thyme-like taste. It is often combined with other Mediterranean herbs such as rosemary, thyme, sage, fennel and bay leaves. It has an affinity to legumes, particularly lentils, and, since it is a carminative, this is a good thing. Savory is also great in marinades and salad dressings, rubbed on pork and poultry prior to cooking, and in stuffing. The somewhat sharp flavour and fragrance mellows in cooking.
