Fregula Sarda / Fregola Sarda
Couscous is a pasta form originating in North Africa made from semolina, which is the roughly milled endosperm of Durum Wheat. Water is added to the semolina and the paste is formed into small spheres. Fregula Sarda is the delicious, toasty, rough textured version. Use in the classic Sardinian dish with saffron-scented, spicy tomato sauce and clams - or with aromatic vegetables or mushrooms, in salads, soups, etc. Cook in stock or water until al dente. One cup dry yields about 2 cups cooked.
