Preserved Lemons (750ml)

Whole lemons preserved in brine are a North African staple, used in a wide variety of dishes, notably tagines of meat, poultry and fish. You can use the flesh if you like, but it is the peel that is special mildly tart and intensely lemony. Rinse to remove some salt and cut into strips. Preserved lemon has an affinity with olives, olive oil and aromatic herbs try tuna confit with preserved lemons, olives and rosemary sprigs.
