Gyokuro means "jade dew" and references the delicate bright green colour of this special shaded tea from the oldest tea growing region of Japan. As the tender new leaves bud in the spring, woven screens are set up to shade the plants for several weeks, causing the leaves to develop more chlorophyl, as well as a sweeter flavour and unique aroma. To preserve the delicacy of the tea, as well as its beautiful bright green colour, it must be brewed at a very low temperature,  55C.
