Black Chickpeas or garbanzo beans (also desi channa, kala channa) are an ancient legume mostly used in South and Central Asian cuisines. All chickpeas are an excellent good source of calcium, B Vitamins, protein and iron, but the black variety is higher in fiber and has a very low glycemic index that makes it suitable for people with blood sugar problems. Soak overnight, rinse, cover with fresh water and bring to a boil. Reduce heat and simmer, covered, until tender. Skim foam as required. One cup dry yields 2 cups cooked. Use in dhals and curries, salads, stews, soups, etc.
