Cinq-ιpice chinois / Imported spices
Five-spice powder star anise, cinnamon, Szechwan peppercorn, cloves and fennel immediately evokes Chinese cuisine. Blends differ, but the dominant note is always star anise. It is used in a wide range of dishes with vegetables, mushrooms, seafood, poultry and meat but it is particularly good with rich and richly flavoured foods such as roasted, barbequed and braised duck, pork and beef, and in dishes using rehydrated shiitakes. Warm and sweet, but pungent, a little goes a long way - use sparingly.
