Épazote / Mexico
It is a challenge to do justice to this wonderful herb with words – a common English language names include creosote bush, goosefoot and pigweed! But epazote is wonderful in meat, cheese, corn and bean dishes, and in the latter, is purported to control flatulence. Combines well with chile, cumin and Mexican oregano. Pick out any coarse stems and use 2 to 3 teaspoons of dried leaves per pound of ingredients.
