Cloud ears fungi are used throughout China and South East Asia. This smaller, dark on both sides type has a better flavour and texture than larger varieties. Cloud ears have a delicate, slightly smoky flavour, but their unique texture, both slippery and crunchy, is the primary attraction. Re-hydrate in hot water (size will increase five-fold) until soft and glossy. Add to stir-fries, hotpots and soups - cloud ears are the dark, softly crunchy strips in hot and sour soup.
