Highly perfumed, sweeter and darker coloured than so-called true cinnamon (cinnamomum zeylanicum), Saigon cinnamon is ground from a particular type of cassia quills (cinnamomum loureirii) which have been cured, washed, dried, and finally, fermented, to produce a particularly fine and fragrant product. Many English-speaking countries make a distinction between cinnamon and cassia, and regard the former as superior, but this is more about colonial politics than quality. In France, all of the subtly different varieties of South China Seas cinnamon/cassia would simply be called canelle.
