Highly perfumed, sweeter and darker coloured than so-called true cinnamon (cinnamomum zeylanicum), Korintje cinnamon is ground from the quills of a high grade of Indonesian cassia (cinnamomum burmanii). There is much debate about the relative merits of cinnamon and cassia, but it's more about competing colonial commercial interests than quality. South China Seas cinnamon/cassia comes from (formerly British) Sri Lanka, (formerly French) Vietnam and (formerly Dutch) Indonesia. Each has subtle flavour and fragrance nuances, but all add an enticing warmth and sweetness to both sweet and savoury dishes.
