Piment de Cayenne en poudre
Cayenne is a hot red chile chile, which takes its name from the city of Cayenne in French Guyana. It has a clean, straight-ahead heat without the subtle flavour nuances of some chiles, which makes it perfect for adding “heat” to a dish. Chile in general, and Cayenne in particular, is reputed to have important medicinal applications, particularly for gastro-intestinal problems and heart disease (it is a vasodilator). It is used in mainstream medicine to relieve pain - capsaicin temporarily causes nerves to release neurotransmitters, which prevents them from sending pain signals.
