Sel Noir / India
Black salt (which gets its name from its colour when in lump form) is pink when ground. It has a tangy taste and a smoky, (surprisingly appealing) sulfurous fragrance, which complements sweet, sour spicy dishes, notably the various Indian appetizers collectively known as chat and Indian relishes/chutneys. It combines well with asafetida, cumin and amchur. Like all salts, it combines and dissolves readily, and can be added to finished dishes.
