Agar agar (kanten in Japanese) was discovered in Japan in the seventeenth century. Derived from algae, its primary culinary usage is as a vegan substitute for gelatin. Throughout Asia, agar agar is used to make a wide range of delicately sweet jellies, including the Japanese bean jellies, called Yokan, and the various fruit flavoured and coloured cubes and spheres that are found in mixed dessert/beverages such as Filipino halo-halo. It is also useful to strengthen soufflés and custards, and to clarify stocks.
